Steak Conference

So a few of my friends and I are going to start a Steak Conference. The purpose will be to get information about how to cook a good steak out to people who attend. There will be a few presentations. One will be on the different types of steak and another will be on how to cook the steak for different levels of doneness. I was wondering if anyone had any ideas of other topics that could be discussed. We want this to be more educational and less opinionated. So topics like side dishes and marinades or rubs (recipes) are okay but not as desirable. If this sounds like fun I suggest that you try it. Oh yeah, there will be a "Meat and Greet" afterwards.
